Ingredients

Peppers

½ Bell pepper

4 tablespoons of Neutral oil

1 Small chopped onion julienne

2 Garlic cloves

1 tablespoon of Ground cumin

2 Bay leaves

100 grams of Rice

100 grams of Black beans

200 milliliters of Vegetable broth

1 pinch of Salt

2 Medium chopped onions julienne

2 Chopped garlic cloves

5 tablespoons of Oil

Juice of half a lime

1 Medium yuca

Cuban mojo

Preparation

Step 1 : The black beans are cooked in a pressure cooker or traditionally after a pre-soak.

Step 2 : Meanwhile, in a skillet with hot oil, sauté the peppers until they start to soften, then add the onion and garlic.

Step 3 : Continue cooking until the onion loses color, then add the ground cumin and cook for 3 minutes.

Step 4 : Add the black beans to the soffrito and cook for a few more minutes with some cooking water, then incorporate 200 ml of broth.

Step 5 : Season with salt to taste and, when it begins to boil, add the rice.

Step 6 : Cook over low heat, covered, for 15 minutes.

Step 7 : To prepare the mojo, sauté the onion and garlic over low heat with oil until the onion is very tender.

Step 8 : Remove excess oil and season with salt and lime.

Step 9 : Meanwhile, cut the yuca in half and boil until tender, about 45 minutes.

Step 10 : Once ready, season with mojo and serve.
