250 grams of Chickpeas
2 Garlic cloves
2 Onions
Cilantro
1 teaspoon of Salt
1 tablespoon of Flour
½ teaspoon of Red chili powder
1 tablespoon of Baking powder
½ teaspoon of Ground black pepper
½ teaspoon of Ground cumin
½ teaspoon of Ground cinnamon
Olive oil
Preparation
Step 1 : The chickpeas should be soaked for at least 12 hours.
Step 2 : Once that time has passed, chop the onion and cilantro, then add them to the chickpeas and process quickly in a food processor.
Step 3 : Next, incorporate the flour and spices into the mixture and let the dough rest for about an hour.
Step 4 : After resting, form small flattened balls or elongated croquettes, making sure they are not too thick.
Step 5 : Then, fry the croquettes in plenty of hot oil until golden.
Step 6 : To serve, it is recommended to accompany the croquettes with rice seasoned with achiote.
