To prepare the delicious Spring Risotto, start by boiling the vegetable broth and cooking the chopped vegetables over low heat.

Spring Risotto
Ingredients
500 grams of Rice
150 grams of Mushrooms
1 Red bell pepper
50 grams of Onion
200 grams of Pumpkin
200 grams of Zucchini
50 grams of Frozen peas
50 grams of Leek
3 Roma tomato
1 cup of White wine
100 grams of Margarine
1 ½ liter of Water
½ Vegetable broth cube
Chopped parsley
Sunflower oil
1 pinch of Salt
Grated cheese
Saffron capsules
1 pinch of Black pepper
Preparation
Step 1 : In a saucepan, place 1.5 liters of water along with one and a half vegetable broth cubes and bring to a boil until the broth is fully dissolved.
Step 2 : Chop the red bell pepper, zucchini, zucchini, and leek, sauté, and once cooked, place in a bowl to cool down.
Step 3 : Finely chop the onion and sauté with 1/3 of the margarine. Once soft, add the rice and cook for 1 minute, stirring constantly.
Step 4 : Pour in the white wine and stir over high heat until all the alcohol evaporates.
Step 5 : Then, add broth to cover the rice, season with salt, pepper, and saffron, and add the frozen peas.
Step 6 : Add more broth as needed to prevent the rice from sticking to the bottom, until halfway cooked, then incorporate the cooked vegetables.
Step 7 : Cook the rice as usual.
Step 8 : Once cooked, remove from heat, cut the margarine into small cubes, and mix with the grated cheese within the risotto.
Step 9 : Chop parsley and, at serving time, use it to decorate the surface of the risotto.
