Vegan Meatballs with Mushroom Sauce
Ingredients
2 cups of Cooked lentils
2 tablespoons of Cilantro
¼ cup of Oats
1 cup of Cooked white rice
2 tablespoons of Breadcrumbs
1 tablespoon of Onion powder
1 tablespoon of Cumin
Olive oil
⅓ cup of Chopped onion
1 tablespoon of Chopped garlic, for the sauce
2 cups of Quartered mushrooms, for the sauce
2 cups of Soy milk
¼ cup of White wine for the sauce
1 Thyme sprig for the sauce

Preparation
Step 1 : To prepare the meatballs, process the lentils along with the cilantro and oats in a food processor.
Step 2 : Then, mix this preparation with the rice, breadcrumbs, onion powder, cumin, and season with salt and pepper to taste.
Step 3 : Using your hands, form the meatballs and cook them in a skillet with a little olive oil until browned.
Step 4 : Set aside.
Step 5 : For the sauce, heat a tablespoon of olive oil in a skillet over medium heat and sauté the onion, garlic, and mushrooms until soft.
Step 6 : Then, add the soy milk, white wine, and thyme, and cook for 5 minutes.
Step 7 : Remove from heat and let cool slightly.
Step 8 : Subsequently, blend this mixture and pour it into a pot, cooking for 10 minutes until it thickens.
Step 9 : To serve, place the meatballs on a plate and cover with the mushroom sauce.
