Vegan Pad Thai

Vegan Pad Thai is a delicious plant-based version of the classic Thai dish. With a blend of sweet, sour, and salty flavors, this dish combines rice noodles, fresh vegetables, crumbled tofu, and a flavorful sauce based on garlic, soy sauce, and toasted peanuts. The peppers are cut into strips 2.5 centimeters long, and the onion is sliced julienne style, then set aside.

The peanuts are toasted in a skillet without oil over low heat, stirring occasionally.

In a hot skillet with a little oil, sauté the onion and pepper until tender, then add the crumbled tofu and cook for 8-10 minutes.

Ingredients

2 Red peppers

1 Spring onion

80 grams of Raw peanuts

100 grams of Bean sprouts

300 grams of Whole grain rice noodles

2 Tofu blocks

1 teaspoon of Soy sauce

2 tablespoons of Vegetable broth

6 teaspoons of Rice vinegar

1 teaspoon of Olive oil

1 tablespoon of Brown sugar

1 tablespoon of Cayenne pepper

1 Garlic clove

20 milliliters of Lime juice

Preparation

Step 1 : The peppers are cut into 2.5-centimeter-long strips, and the onion is sliced julienne, then set aside.

Step 2 : Subsequently, toast the peanuts in a skillet without oil over low heat, stirring occasionally to toast them evenly without burning.

Step 3 : In a hot skillet with a little oil, sauté the onion and pepper until tender.

Step 4 : While the vegetables cook, drain the tofu and crumble it with your fingers.

Step 5 : Once the vegetables are tender, add the tofu and cook for 8-10 minutes or until the tofu has released excess water.

Step 6 : Then set aside.

Step 7 : Prepare the noodles traditionally, and while they cook, prepare the Pad Thai sauce.

Step 8 : For this, chop the garlic and sauté in a skillet with one tablespoon of oil before adding the sugar.

Step 9 : Once the garlic turns color, add the remaining ingredients and cook for 2 minutes.

Step 10 : After cooking the sauce, add the vegetables with the tofu, noodles, bean sprouts, and toasted peanuts. Mix and cook for a few more minutes, stirring constantly until the dish is no longer watery.

Step 11 : Finally, serve the hot Pad Thai garnished with lime wedges.
