Ingredients

1 kilogram of Yellow corn flour

1 ½ kilogram of Banana leafs

4 Chopped eggplants

50 grams of Finely chopped scallions

50 grams of Finely chopped sweet chili peppers

100 grams of Cooked chickpeas

4 Carrots

2 Finely chopped large onions

10 Crushed garlic cloves

3 Eggplants

1 cup of Swiss chard

250 grams of Broccoli

500 grams of Gluten

500 grams of Mushrooms

100 grams of Leek

250 grams of Green beans

250 grams of Cauliflower

250 grams of Almonds

2 Bell peppers

250 grams of Hearts of palm

Raisins

Soy sauce

1 pinch of Salt

Preparation

Step 1 : For the dough, start by making a sauce by frying the garlic, onions with onoto oil, soy sauce, and salt to taste. Then add the corn flour gradually while stirring gently.

Step 2 : The dough should be firm enough so that it doesn't stick to the spoon when spreading.

Step 3 : For the filling, dice all the vegetables, then add the cooked chickpeas. To this mixture, add soy sauce, onoto oil, salt, and if desired, enhance the flavor with a sauce made of green seasonings—such as the liquid from capers and olives, which can be added directly to the filling.

Step 4 : Mix everything very well and let it rest overnight, preferably in a clay pot covered with banana leaves.

Step 5 : Spread out the hallaca dough and place the appropriate amount of filling in the center. Top with a sample of each of the decorative elements.

Step 6 : Tie with fine string. Cook the vegetarian hallacas in boiling water for two hours.
