Ingredients

200 grams of Bomba rice

½ Red bell pepper

1 Leek

½ Zucchini

100 grams of Mushrooms

25 grams of Green beans

2 Garlic cloves

200 grams of Crushed tomato

1 teaspoon of Paprika and a few saffron threads

1 tablespoon of Bell pepper meat

25 grams of Peas

Broccoli florets

400 milliliters of Vegetable broth

Olive oil

1 pinch of Salt

Preparation

Step 1 : In a large skillet, heat a splash of olive oil over low heat.

Step 2 : Once hot, add the leek, red and green bell peppers, zucchini, green beans, and mushrooms, all previously chopped.

Step 3 : Add a pinch of salt and cook for 10 minutes, stirring frequently.

Step 4 : Then, increase the heat to medium and add the crushed tomato with a little more salt, stirring to distribute evenly.

Step 5 : Let everything cook for 5 minutes, stirring from time to time.

Step 6 : Next, add the paprika, saffron threads, and bell pepper, incorporating them with the other ingredients for another 5 minutes.

Step 7 : Add the rice, mixing it with the rest of the ingredients until it is fully distributed in the pan.

Step 8 : Then, add the vegetable broth along with a generous pinch of salt, letting it cook for 5 minutes over medium heat.

Step 9 : Add the peas and, after 5 minutes, the broccoli.

Step 10 : Continue cooking until the rice absorbs all the liquid.

Step 11 : Once ready, serve.
